About Us
Located in north Fairfield, Flack Family Farm runs along the Duffy Hill and Pumpkin Village Roads. The farm grows the cabbage, carrots, garlic, onions and radishes used in their fermented food products. Cattle and sheep graze their pastures, the grass-fed beef is available for sale at the farm. They maintain a three season small dairy, where customers can buy raw milk. The livestock on farm are heritage breeds: American Milking Devon cattle and Icelandic sheep: breeds suitable for grazing and the Vermont climate.
Flack Family Farm is certified organic through VOF. The biodynamic calendar is used when choosing planting and harvesting days for the vegetables used in their fermented food products. And, although fermented vegetables are the economic engine, cows and sheep are essential in their farming plan. They invite people to participate and learn their farming methods and fermented vegetable techniques. People come from far and near and some have gone on to start their own fermented foods business. The Flacks think of sauerkraut and kimchi as good examples of food terroir and that each farm produces foods unique to the land and the work that goes into it.

Terroir is the set of all environmental factors that affect a crop's phenotype, unique environment contexts and farming practices, when the crop is grown in a specific habitat.
